Description
- Terms and definition of natural raw materials (ISO/TC54 "Essential oils")
- Extraction methods for volatile constituents: obtaining essential oils, flavor extraction, supercritical CO2 extraction, ESAM process, VMHD extraction, headspace extraction techniques, SPME...
- Characterization of volatile constituents: Gas Chromatography (GC), Ultra Fast Gas Chromatography (UFGC), Flame Ionization Detector (FID), Gas Chromatography-Mass Spectrometry (GC-MS), GC-FTIR, Comprehensive two-dimensional gas chromatography (GC-GC), chiral chromatographic analysis, GC-olfactometry, electronic nose.

Objectives
Knowledge of the origin, natural occurrence, extraction conditions and characterization of the volatile fraction of aromatic plants (essential oils) and flavors.
Experimental training: Application of theoretical teaching on the extraction of flavors and essential oils and their characterization.

Syllabus
Essential oils, concretes, absolutes, alcoholates, hydrolates, oleoresins, resinoids, tinctures, infusions, rectification, deterpenation.
Hydrodistillation, steam distillation, expression, dry distillation, volatile solvent extraction, supercritical fluids, enfleurage, microwave-assisted extractions (SFME, VMHD, ESAM), solid-phase microextraction (SPME).
GC, UFGC, GC-FID, GC-MS, GC-O, GC-FTIR, GC-GC.
