Description
Chemical synthesis and olfactory characteristics of molecules with high aromatic potential: heterocycles, musks, sulfur compounds. Study of alternative synthesis methods.

Objectives
Learn about compounds with very strong olfactory power, naturally present in foods, certain raw materials of animal origin or obtained by chemical synthesis.
Necessary prerequisites
Master 1 ICAP A&P or equivalent training
Knowledge control
60% Final exam (2 sessions), 40% Practical (written)

- Heterocyclic molecules, musks, sulfur derivatives.
Practical work: Application in flavors. Synthesis processes.
