The DU OLEOLOGIE is set up by the University of Montpellier in collaboration with the Association Française Interprofessionnelle de l'Olive (AFIDOL).
The French olive oil industry is currently experiencing a very rapid expansion, leading to changes at several levels:
- the nature of the operations,
- the quantities produced,
- the importance of the number of processing units.
Objectives
- To meet the need for professionalization in the French olive sector.
- This training will enable you to meet regulatory requirements on several levels:
- qualitative,
- commercial,
- purification,
- health and safety,...
- The qualification requirement enables recognition of a professional status.

Knowledge control:
Number of sessions : 1
- Olive growing, written test of knowledge, duration of the test 1,5 h
- Processing techniques, written test of knowledge, duration of the test 2 h
- Composition and Analysis, written test of knowledge and continuous control for the practical work,
- Sensory analysis, tasting test, duration of the test 1,5 h.
- Quality, Health and Safety - Regulations - Economics and Marketing, written test of knowledge, duration of the test 1,5 h.

Training is spread over one day per week from January to June:

Students : Holders of the Baccalaureate or equivalent diploma

Students in the 2nd year of the DNO and students from the UFR of Pharmaceutical Sciences who have validated the 5th year of pharmacy studies are authorized to register within the limits of available places.
Candidates who do not have the previous required diploma can register as free auditors.
